Zucchini Stir-Fry (Marien)

Serves 4

  • 1 medium onion, sliced 1/4 inch rings
  • 1 large clove garlic, sliced
  • 2 Tbs. olive oil
  • 2  eight-inch long zucchinis, sliced 1/4 inch thick
  • 3 small tomatoes, sliced 1/4 inch thick
  • basil, fresh or dried    3 or 4 leaves julienned or 2 tsp dried
  • salt & pepper to taste
  • parmesan or cheddar grated to taste (optional)

1. Heat oil at medium heat in a large frying pan and add onion and garlic.  Cook for 2 or 3 minutes.

2. Add zucchini and cook until heated through and just beginning to be tender.

3. Add tomatoes and cook until warmed through.

4. Season with basil, salt and pepper.  Sprinkle with cheese of choice, if desired.

Serve immediately.
