Serves 8
5 packages (10 oz. each) frozen, chopped spinach
2 cups chopped mushrooms
1/4 cup butter
1 cup freshly grated Parmesan cheese
3/4 cup sour cream
3/4 cup whipping cream
1 Tbs. dried minced onion
1 tsp. (or more) horseradish
1 tsp. freshly grated nutmeg
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup freshly grated Parmesan cheese
Cherry tomatoes
Freshly grated Parmesan cheese
1. Cook spinach, drain in sieve (I usually just thaw it with cool water and squeeze dry).
2. Saute mushrooms in butter until tender. Combine spinach, mushrooms, 1 cup cheese, the sour cream, chipping cream onion, horseradish, nutmeg, salt and pepper in a large bowl until well mixed. Spread in buttered 13 x 9 x 1 1/2 inch baking dish. Sprinkle with 1/3 cup cheese and bake at 350 for 15 minutes. Garnish with cherry tomatoes and bake another ten minutes until set. Dust with remaining cheese and serve.
