Spinach Casserole

serves 8-10

  • four 10-oz pkgs. frozen, chopped spinach
  • one 4-oz can sliced mushrooms (or more)
  • 2 Tbs. liquid from mushrooms
  • 1 1/2 cups sour cream
  • 1 pkg. blue cheese salad mix

1. Cook and drain spinach.

2. Combine spinach with remaining ingredients.  Bake at 350 for 30 minutes.

Can be made a day ahead.
