Serves 6-8
- 2 10 oz. packages frozen French-cut green beans, cooked and drained (or 3 14 oz cans)
- 2 Tbs. butter
- 1 small onion, minced (about 1/2 cup)
- 1 Tbs. fresh parsley, chopped
- 1 tsp. salt
- 1/2 tsp white pepper
- 1 Tbs. flour
- 1/4 tsp. lemon zest, freshly grated
- 1 cup sour cream
- 1 Tbs. dry sherry
- 1 cup grated sharp cheddar cheese
- 1 cup buttered bread crumbs
1. Saute onion in butter. Add parsley.
2. Stir in salt, pepper, flour, lemon zest, sherry and sour cream. Heat through.
3. Fold in beans and then pour into a 1 1/2 quart casserole.
4. Top with cheese, then buttered crumbs. Bake at 350 for 30 minutes.
