serves 6 (1/2 cup servings)
- 3 cups fresh French green beans, partially cooked in about 3 Tbs. water. Snip ends if desired. These are long, slender beans. Any other green bean will work if the French variety is not available.
- 2-3 strips bacon, snipped (use pre-cooked for less fat)
- 1/4 cup onion, chopped
- 2 tsp olive oil
- 1/2 cup tomato diced
- 2-3 tsp. balsamic vinegar
- basil 2 tsp dried or 3-4 fresh leaves, julienned
- salt & pepper to taste
1. In large frying pan par-cook beans in water with lid on. Pour off water and add bacon bits, olive oil and onion. Saute until tender. (This can also be done in a separate pan while beans are steaming.)
2. Add tomatoes, basil, vinegar, salt & pepper to taste. Heat through. Serve immediately.
