Marien’s Green Beans

serves 6  (1/2 cup servings)

  • 3 cups fresh French green beans, partially cooked in about 3 Tbs. water. Snip ends if desired.  These are long, slender beans.  Any other green bean will work if the French variety is not available.
  • 2-3 strips bacon, snipped  (use pre-cooked for less fat)
  • 1/4 cup onion, chopped
  • 2 tsp olive oil
  • 1/2 cup tomato diced
  • 2-3 tsp. balsamic vinegar
  • basil    2 tsp dried or 3-4 fresh leaves, julienned
  • salt & pepper to taste

1. In large frying pan par-cook beans in water with lid on. Pour off water and add bacon bits, olive oil and onion.  Saute until tender.  (This can also be done in a separate pan while beans are steaming.)

2. Add tomatoes, basil, vinegar, salt & pepper to taste.  Heat through.  Serve immediately.
