Green Beans with Cinnamon and Bacon

serves 6

  • 1 Tablespoon butter
  • 1/4 cup chopped onion
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 pounds fresh green beans (2 cans beans, drained)
  • 1/2 cup chicken broth
  • 1/8 teaspoon salt
  • dash freshly ground black pepper
  • 2 Tablespoons tomato paste
  • 6 slices bacon, fried crisp and crumbled     (pre-cooked bacon, snipped into small bits works well here)

1. In medium saucepan, melt butter and saute onion with cinnamon until onion is transparent.

2. Stir in green beans, chicken broths, sald and pepper.  Heat to boiling. Reduce and simmer 20 minutes or until beans are tender.

3. Gently mix in tomato paste and bacon bits. Serve immediately.
