Carrots Baked with Horseradish

serves 6-8

  • 1 pound carrots
  • 1/2 cup mayonnaise
  • 1 Tablespoon chopped onion
  • 1 Tablespoon prepared horseradish
  • Salt & pepper to taste
  • 1/4 cup bread crumbs
  • paprika
  • parsley
  • 2 Tablespoons butter
  • 1/4 cup cooking liquid from carrots

1. Peel carrots and leave whole. In a saucepan or microwave, cover carrots with water and cook until tender.  Drain, reserving 1/4 cup liquid.

2. Slice carrots lengthwise and layer in a buttered baking dish.

3. Combine cooking liquid, mayonnaise, onion, horseradish, salt & pepper.  Pour over carrots.

4. Top with bread crumbs, paprika and parsley.  Dot with butter.  Bake at 375 for 15 minutes.
