Bertie’s Broccoli and Onions

serves 6

  • 2 pkgs. frozen broccoli, cooked and drained
  • 1 can small onions (about 2 cups)
  • 1/4 cup butter
  • 1/3 cup flour
  • 1 cup milk
  • 1/2 cup chicken stock
  • 1/2 cup white wine
  • 1/3 cup slivered almonds
  • 1/2 cup grated sharp cheddar cheese

1. Arrange broccoli and onions in shallow baking dish.

2. Make sauce by melting butter and blending in flour; gradually whisk in milk, chicken stock and wine.  Cook, stirring constantly until mixture bubbles and thickens.  Pour over vegetables.

3. Top with cheese, then almonds.  Bake at 350 for 30 minutes or until nearly brown.
