Asparagus Stir-Fry (Ellen)

serve 4-6

  • 3 cups fresh asparagus, cut into one-inch pieces
  • 2 Tbs. butter
  • 1/2 cup diced celery
  • 1/2 cup sliced water chestnuts
  • 1/2 cup sliced mushrooms
  • 1 1/2 tbs. soy sauce
  • 2 Tbs. slivered almonds, toasted, if desired

1. Melt butter in large fry pan.  Add asparagus, celery, water chestnuts, and mushrooms.  Stir-fry 8-10 minutes, until asparagus is bright green.

2. Remove from heat and lightly toss with soy sauce.  Garnish with slivered almonds.
