A favorite of Marien’s bridge friends.  It is their first choice when on the menu!

A very quick and easily prepared soup!

1 Quart    Serves six

2  14-16 oz cans canned tomatoes  (or your own garden tomato puree)

1/4 cup diced onion

1 Tsp. fresh garlic, pressed

1 Tsp. basil

1/2 cup crumbled gorgonzola cheese

salt and pepper to taste

basil pesto, if desired

Combine tomatoes, onion, basil, garlic and bring to a boil.  Simmer ten minutes.

Blend with immersion blender.  Add gorgonzola and season to taste with salt and pepper.

Pass pesto with it.
