Southwest Chicken Soup

1 onion, chopped

2 cloves garlic, chopped

1 Tbs. oil

1 rib celery, sliced

1 carrot, sliced

1 qt. chicken broth

1 can green beans

1 can corn

1 can kidney or black beans

1 can chopped tomatoes

2 cans chicken

1/2 cup raw rice (opt)

1-2 Tbs. chili powder

Garnishes: corn tortilla strips, sautes or baked, bagged tortilla chips, sliced radishes, sliced black olives, sour cream shredded cheddar or jack cheese, chopped cilantro, salsa

1. Saute onion, carrot, celery and garlic in oil.

2. Add corn, beans, broth, rice, chicken and chili powder.  Simmer for half an hour.

This can simmer a long time; it gets better as it cooks.

3. To serve, place bagged chips in bowl and ladle soup over.  Garnish as desired.

If desired, ladle soup in first and add desired garnishes.
