1 lb hamburger
1 medium onion, chopped
1-2 cloves garlic, finely chopped or sliced
1 Tbs. oil
1 carrot, sliced in 1/4″ rounds
1 large stalk celery, sliced in 1/4″ pieces
1 can green beans
1 can corn
1 can kidney beans, black beans, or lima beans
1 medium potato, peeled and cubed into 1″ chunks
1 can diced tomatoes
1 can tomato sauce (optional)
1 cup uncooked macaroni or noodles in place of potatoes (optional)
1 qt beef bouillion
1 large bay leaf
1 Tbs. basil
1. Brown hamburger, onions and garlic in oil until meat is browned and onions are transparent.
2. Add carrots, potatoes, celery and broth. Cook about ten minutes. Add remaining ingredients and simmer until carrots and potatoes are done and flavors are blended. Add salt and pepper to taste.
3. Garnish with parmesan cheese. Serve with green salad and hot bread.
