Serves 14-16
Ingredients
- 2/3 cup slivered almonds
- 8 cups (about 1 pound) shredded napa cabbage
- 12 oz. snow peas, strings removed, thinly sliced
- 1 1/3 cups thinly sliced radishes
- 1 1/3 cups thinly sliced green onions
- 1 1/3 cups lightly packed fresh cilantro leaves (less is okay)
- 3 Tbs. white wine vinegar
- 3 Tbs. sugar
- 1 Tbs. soy sauce
- 1 clove minced garlic
- 1/2 tsp. Asian sesame oil (if you use “hot” oil, omit cayenne)
- 1/2 tsp. ground ginger
- 1/4 tsp. cayenne
- 1 cup mayonnaise
1. Place almonds in cake pan and bake at 350 until golden (6-9 minutes). Shake or stir a few times.
2. Combine cabbage, snow peas, radishes, green onions, almonds and cilantro.
3. Toss gently with Creamy Soy Dressing.
4. To make dressing, combine vinegar, sugar, soy sauce, garlic sesame oil, ginger and cayenne in a small bowl. Stir until sugar dissolves. Whisk in mayonnaise, stirring until blended.
