Black Bean Salad

serves 4-6
  • 2 (12 oz) cans black beans, rinsed until water runs clear
  • 1 (12 oz) can corn.  Fresh is even better!
  • 1/2 tsp granulated garlic powder
  • 1/2 red onion, chopped
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 bunch cilantro, chopped
  • 1 large tomato, chopped
  • ground cumin, to taste
  • salt & pepper, to taste

Rinse and drain beans.  Add all of the ingredients and season with last three seasonings.

Makes a great side dish for Mexican-style meals.  Also great as a salsa with chips!!
