serves 4-6
- 2 (12 oz) cans black beans, rinsed until water runs clear
- 1 (12 oz) can corn. Fresh is even better!
- 1/2 tsp granulated garlic powder
- 1/2 red onion, chopped
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 bunch cilantro, chopped
- 1 large tomato, chopped
- ground cumin, to taste
- salt & pepper, to taste
Rinse and drain beans. Add all of the ingredients and season with last three seasonings.
Makes a great side dish for Mexican-style meals. Also great as a salsa with chips!!
