Serves 4
1/4 cup butter
1/3 cup flour
1/2 tsp. salt
1 cup chicken broth, warmed
1 cup milk, warmed
1 Tbs. sherry or dry white wine (optional)
2 cups diced chicken
1/4 cup chopped pimiento (1 small jar)
1/4-1/2 cup sliced mushrooms (can use canned)
4 puff pastry cups or 4 slices of bread toasted and cut diagonally
1. Melt butter in a medium saucepan.
2. Combine and whisk in the flour and salt; mix until smooth.
3. Whisk in the liquids together and stir until smooth, stirring constantly until thickened.
4. Add sherry or wine, if desired. Add remaining ingredients and heat through.
5. Serve over toasted bread triangles or puff pastry cups.
