Oatmeal Cookies

makes 6 dozen

3 eggs, well beaten

1 cup raisins

1 teaspoon vanilla extract

1 cup butter

1 cup brown sugar

1 cup white sugar

2 1/2 cups flour

1 teaspoon salt

1 teaspoon cinnamon

2 teaspoons baking soda

2 cups oatmeal (can substitute 1/2 cup wheat germ for part of oatmeal if desired)

3/4 cup chopped pecans

1/2 – 1 teaspoon freshly ground nutmeg (not in original recipe)

1. Combine raisins in beaten eggs and vanilla; cover and let stand for one hour.  This adds moisture to finished cookie.

2. Cream together the butter, sugar, brown sugar, salt, cinnamon, baking soda, and nutmeg.

3. Mix in flour,  then add the egg mixture.

4. Stir in the oatmeal and nuts. Dough will be stiff.

5. Drop by teaspoons onto ungreased sheet.  Bake at 350 for 10-12 minutes or until lightly browned.
