*To serve 4-6 people; makes about four six-inch pancakes per person
In a large mixing bowl measure:
- 5 cups of flour
- 3 Tbs. baking powder **
- 1-1/2 tsp. salt
- 1/4 cup salad oil
- 3 eggs
- 3-4 cups buttermilk
Mix dry ingredients in bowl, add liquids and stir in buttermilk just until batter pours easily as desired onto hot, well oiled griddle. Flip when bubble form and pancake will hold form when turned. Dad’s batter is fairly thin with some small lumps of flour. Don’t over-mix.
* Roughly four to five pancakes per cup of flour, depending on how thickness of batter.
**In cookbooks most recipes show about 2- 2 1/2 teaspoons baking powder per cup of flour.
