Zucchini Bread (Marien)


2 loaves

  • 3 eggs
  • 1 cup salad oil
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 teaspoons vanilla
  • 1 cup chopped nuts
  • 2 cups grated zucchini, raw, packed

1. Beat eggs.  Add sugar, oil, vanilla and mix well.  Add zucchini.

2. Sift together the flour, baking soda. salt, cinnamon.

3. Blend wet ingredients into dry ingredients and mix well.  Fold in nuts.

4. Pour into two well-greased loaf pans.  Bake at 350 for 1 hour.
