makes 4-5 shaped loaves

1/2 cup unsulphered black strap molasses  (must be unsulfered)

1 cup brown sugar

2 Tbs. butter

2 Tbs. salt

2 cakes / packs yeast dissolved in 1/2 cup warm water

4 cups rye flour

8-9 cups whole wheat flour

1. Combine molasses, brown sugar, butter, and salt.  Add enough water to make 3 cups liquid.  Warm until melted together.

2. Add enough cold water to cool mixture and make 5 cups liquid.

3. Blend in softened yeast.

4. Work in flour.  Knead 10-30 minutes.  Allow to rise in well-greased bowl (with room to double in size) for about two hours.  Put in oven with oven light on.  This gives enough warmth to encourage dough to rise but not enough to be too hot.

5. Punch down and shape into 4-5 loaves and let rise again about 1 hour.

6. Bake at 350 for 55 minutes.
