Cranberry Orange Bread

two loaves

2 cups cranberries, chopped

3/4 cup chopped pecans

1/2 cup orange juice

1/4 cup water

1 egg, beaten

2 Tbs. butter, melted

1 tsp. orange zest

2 cups sifted flour

1 cup + 2 Tbs. sugar

1 3/4 tsp. baking powder

1 tsp. salt

1/2 tsp soda

1. Sift together the flour, sugar, baking powder, salt, and soda.

2. Whisk together the egg, orange juice, water,  melted butter and orange zest.

3. Gently combine the liquid and dry ingredients until moistened.  Fold in cranberries and nuts.  Batter will be stiff and sticky.

4. Pour into two well-greased loaf pans.  Bake at 350 for 60-70 minutes, until toothpick in center comes out clean.
