Serves 8-10
- 1 baguette, sliced into 1/2- inch pieces on the diagonal…about twenty slices
- olive oil to brush bread
- 1 8-oz pkg. (or more) fresh mozzarella, sliced into 20 slices about 1/4 inch thick
- 20 spears fresh asparagus
- smoked salmon
- fresh tomato slices and basil are also suggested toppings
1. Brush bread slices with olive oil and broil or toast in oven on a baking sheet.
2. Cut asparagus spears to the length of the bread slices; steam until just done and set aside to cool.
3. Just before serving, place a thin slice salmon on bread, then a slice of fresh mozzarella. Top with a spear of asparagus. Broil until cheese is bubbling.
4. Transfer to serving platter and serve immediately.
This is also good with tomato and asparagus over the cheese, or tomato and basil.
Omit the salmon, if desired.
