I usually make this at Christmas for hostess gifts.
1 cup sugar
1 tsp. salt
1 tsp cinnamon
1 egg white, whisked with 1 tsp water until frothy
1 lb. pecan halves (I use the 2-lb bag from Costco instead; same quantities of sugar, etc. as listed in this recipe…don’t add more)
Blend together the sugar, salt and cinnamon. Set aside.
Spread pecans in a large roasting pan. (cookie sheet with sides works if using only 1 lb nuts) Mix with frothed whites until moistened.
Gradually fold in sugar mixture until nuts are well coated.
Bake at 225 for an hour or until nuts are dry and heated through. Stir every fifteen minutes until done.
